We are blown away by the natural fruit forward/ rich chocolate flavors that come from this coffee. How does this happen? The acetic process of the Tabi varietal! We created a Medium Roast profile for this bean that showcases the immaculate attention that goes into the coffee, from the farm to our drum roaster and into your cup!
Processing - Natural Acetic:
The coffee cherries are harvested at around 90% ripeness. Oxygenation of the water in the fermentation tanks is required to create a biome for acetobacter micro bacteria (acetic fermentation). Ripe cherries are placed in 50 litre tanks for fermentation for 290 hours to ensure there is adequate time for flavor development. After this the cherries are dried on raised beds for 30 days!
